I've had several people ask for the
recipe for the Bacon Onion scones I made a few weeks ago. The pic of them is further down the line. So, here it is.
First off, the easy way to cut butter into flour. Freeze butter for 20-30 minutes, then grate it with a box grater. Put back into freezer until nice and hard, then add to flour, and press in with your fingers until well integrated. SO much easier than trying to add hunks of cold butter to flour, and makes for much nicer baking.
Heat oven to 400 degrees
In skillet over medium heat cooked
4 pieces bacon, chopped ( I use center cut bacon all the time, less fat)
1 med onion chopped
about 4
mins or until
bacon is cooked. cover mixture and chill until you're done
with the butter.
In bowl, combine 2 cups all-purpose flour
2 teaspoon baking powder
1
teaspoon sugar
1/4 teaspoon salt
Cut 6 Tablespoons unsalted butter i
nto flour mixture.
Mix in bacon/onion mixture
Add 3/4 cup Milk ( you could use buttermilk as well)
On floured surface, shape dough into 7 inch disc.
using floured knife, cut dough into 8 wedges.
Place on greased baking sheet ( I use parchment paper).
Brush with lightly beaten egg.
bake 15
mins, or until golden brown.
Cool 5
mins.
